
Bananas about Bananas!
A great way to use up those nearly to overripe bananas…. This banana loaf will recharge your batteries in that mid-morning coffee break.
Ingredients
125g butter
175g caster sugar
x2 eggs
x3 ripe bananas (mashed)
Few drops of vanilla essence
1/2 tsp cinnamon
1/2 tsp bicarbonate of soda
x2 tbsp milk
185g self-raising flour
Method
Preheat oven 165/gas mark 3. Cream butter and sugar until smooth. Beat eggs in a separate bowl and add gradually to the butter and sugar mix.
In the mashed bananas, add the cinnamon and vanilla essence.
Sift flour into the butter, sugar and eggs, add the bicarbonate of soda and milk, then mix well.
Add banana mix to everything else and give one final thorough mix. Line a loaf tin with grease proof paper and pour contents.
Place in the oven for one and a half hours, check with a knife to see it runs clear, if not leave for a further 10-15mins or until knife runs clear.
Great with a cup of tea of even a spot of custard as an after dinner treat!!! Enjoy!
