Happy Eggs!!!

Perfect weekend breakfast for anyone and all the family!!!

Serves 4


2 spring onions
1 medium green chilli
1 tomato (chopped & deseeded)
A large handful of spinach
1 clove of garlic
4 eggs (one per person, add more accordingly)

Lightly fry, in a drizzle of olive oil, the spring onions sliced, chilli finely chopped, tomato and garlic crushed or finely chopped.
When soft, remove from heat and beat eggs in a bowl and add to the ingredients in the frying pan.
Return back to the heat, add the spinach and season with salt and pepper. Scramble/stir until spinach has wilted and eggs are slightly creamy turning to well done.

Serve with toasted bread, finely sliced ham (optional) and grated cheese.
