Spaghetti with Wilted Spinach & Mushroom sauce

A lovely quick and easy delicious mid-week meal for the family!

Serves 4

250g/9oz Spaghetti/Linguine
1tbsp Olive oil
1 Clove of Garlic, finely chopped
4 rashers of Bacon, sliced (optional)*
125g Mushrooms
100g Spinach
120g Soft Cheese
5 tbsp Milk
Salt & Pepper, to season

1) Cook the Spaghetti according to the instructions on the packet. Whilst it is cooking, heat the oil in a deep frying pan and add the garlic, bacon and mushrooms until browned/soft.

2) Add the soft cheese, milk and Spinach until the soft cheese melts and forms a creamy sauce. Add salt and pepper to season.

3) Drain the Spaghetti and serve into individual bowls and top with the sauce. Serve immediately with fresh Parmesan shavings and freshly ground black pepper.
Accompany with garlic bread or simply dressed salad leaves.
